When living a low carb lifestyle steamed vegetables get very boring very fast. I am always trying to reinvent new ways to cook vegetables and this is by far one of my favorites. In a previous post I professed my love for french green beans, by claiming them as nature's pasta, and now I am also turning them into french fries. No slicing or dicing needed for this yummy treat. Just a few ingredients and a super hot oven and you have got a great appetizer or side dish.
Roast them dry for real crunch
The whole trick is heat and space. Pat the green beans dry, spread them out in a single layer so they are not touching, and roast them at a high 425°F. Crowd the pan and they steam into something limp; give them room and the edges crisp like a fry while the parmesan browns. If you want a true breaded version, dip the beans in beaten egg first and then in parmesan or crushed pork rinds, since the egg wash is what makes a coating grip where a dry one slides right off.
