Keto Parmesan Garlic Wings, Crispy Without Frying

Method

These keto parmesan garlic wings get their crunch from a dry rub of parmesan and ranch seasoning, not from breading or a deep fryer. Air-fried in a single tablespoon of oil, they come out crisp at about 2 grams of net carbs, a dry-finish wing rather than a saucy one.

I hope everyone had a fun at their Super Bowl parties. My husband and I decided to keep things quite this year by just watching the game at home. Since we opted out of having a party this year we decide to keep things simple, so I decided to make one of my favorite cooking gadgets do all the work. I pronounce my love of the Tfal ActiFry in a gadget post a while ago and decided to try making some Low Carb chicken wings in it. These were so simple to make and let me tell you they were better than any fried chicken I have ever had. I simply tossed my drummets in dried spices and Kraft parmesan cheese and hit start. That's it! This was so easy I didn't miss even one commercial. Aside from being super easy to use, the T-fal ActiFry Low-Fat Healthy Multi-Cooker only needs one tablespoon of oil to make perfectly fried wings. So not only do you end up with perfectly cooked Low Carb crispy fried wings, but they are healthy as well. My Crispy Garlic Parmesan Chicken Wings turned out so good that I plan on making these again for my Oscar Awards party!

Crispy wings without the deep fryer

Crisp skin on a wing comes down to two things: getting the skin dry and getting hot air all around it. The air fryer does both at once, which is why a single tablespoon of oil is enough here. If you are using the oven instead, two tricks stand in for it. Pat the drummettes bone dry first, since any surface water steams the skin instead of crisping it. Then set them on a wire rack over a sheet pan and toss them with a tablespoon of baking powder before baking; the baking powder raises the skin's pH and helps it blister and brown. Either way, cook them to 165 degrees F, the USDA mark for poultry.

A dry-rubbed wing, not a saucy one

What makes these different from most garlic parmesan wings is that the parmesan is a dry rub, not a wet sauce stirred with melted butter. The ranch seasoning and grated parmesan form a crust on the skin as it crisps, so you get the flavor without the glaze that turns a wing soggy.
