The name matters to how these cook. An omelette is the French move, eggs cooked fast and folded over in a skillet. A frittata is the Italian one, where the eggs set slowly and finish firm all the way through, which is exactly what happens in a muffin tin. The green chiles are the Southwestern and Mexican layer, mild Ortega-style diced chiles rather than hot peppers, so they bring flavor and a gentle warmth without heat that would scare off a brunch crowd. Three cheeses and a splash of cream keep each bite rich.
Net carbs and the texture fixes
The carb math stays friendly. Eggs and cheese are near zero, and the diced green chiles run only about 2 grams of net carbs per pepper, so a whole cup spread across 48 minis barely registers, landing a serving of six around 2 grams.
