Salami chips are the easiest low carb snack there is, thin salami crisped in the microwave in two minutes into a near-zero-carb chip. They are great on their own and sturdy enough to scoop a thick dip, and the only thing that decides crisp versus chewy is how thin the salami is sliced.

This is even easier than the parmesan crisps. Simply buy some good quality salami that is thinly sliced and put it in the microwave for 2 minutes, transfer to a paper towel to drain off some grease. That's it! These are great on their own or with your favorite dip.

Thin salami is the whole trick

Salami is Italian salumi, cured pork that already tastes like a party; crisping a thin slice just turns it into a chip, the same idea as a pepperoni chip with nothing added. The one thing to get right is the slice. Thin-cut salami renders its fat and shatters into a real crisp in two minutes, while a thick slice only goes chewy and greasy. Blot the rendered grease on a fresh paper towel and they firm up as they cool. They go soft if they sit out in a humid kitchen, so make them close to when you will eat them.

A salami chip is rigid enough to hold a heavy dip without snapping, which a cracker rarely manages.
