Keto Stuffed Mushrooms with Artichoke Dip

These keto stuffed mushrooms are filled with a no-spinach artichoke dip, parmesan, Monterey Jack, and a little jalapeno, then broiled until the top is golden. At about 3 grams of net carbs they are a make-ahead party bite, and the one trick that keeps them from going soggy is draining the caps before they bake.

I love mushrooms of all shapes, sizes, and types. My favorite way to serve them is as an appetizer and since this is Friday Funday I felt the need to share this simple recipe that will have your guests begging for more this weekend. For this recipe I used stuffing portabellas because they are more flavorful and meaty than the average white mushroom. You can find these just about anywhere including Trader Joes and Costco. If you want them to be a smaller one-bite horderve than use the extra small button mushrooms. They are one of the party bites in my low carb snacks guide.

A spinach-free artichoke dip

Most keto stuffed mushrooms reach for the same filling: spinach and artichoke bound with cream cheese, the dip everyone knows. This one drops the spinach and the cream cheese for a sharper, simpler version, mayonnaise and two cheeses with artichoke and a few slices of jalapeno for heat. It tastes like the hot artichoke dip you would set out with chips, not a creamed-spinach side, and it comes together in one buzz of the food processor. Make a double batch and keep half as a dip; it holds a week.

The watery-mushroom fix

The thing that ruins a stuffed mushroom is water. Caps are full of it, and as they cook the liquid runs out and turns the filling to soup in the pan. The fix is to roast the empty caps gill-side down for about ten minutes first, so they release that water before you fill them, then tip off whatever pools up. Scraping out the dark gills with a spoon helps too, since that is where a lot of the moisture and the muddy flavor sit. Then fill, top with more Monterey Jack, and broil until golden.
