Low carb comfort food dinners are easier than they sound, because the thing that makes most comfort food carby is usually one ingredient you can swap out, not the dish itself. Where comfort carbs hide

Comfort classics come from all over, Texas chili con carne, Mexican carnitas, Italian polpette and rolled meatloaf, and almost all of them go keto by pulling one ingredient rather than rebuilding the dish. The carbs hide in three places. The first is breading and binders: the breadcrumb in meatballs and meatloaf swaps cleanly for parmesan or crushed pork rind, which bind and season at nearly zero carbs. The second is beans, the filler in chili that was never in the original Bowl of Red anyway; leave them out. The third is flour and cornstarch thickeners in sauces and gravies; reduce the sauce instead, or stir in a little cream cheese, or let tomato paste do the work.
