Where comfort carbs hide
Comfort classics come from all over, Texas chili con carne, Mexican carnitas, Italian polpette and rolled meatloaf, and almost all of them go keto by pulling one ingredient rather than rebuilding the dish. The carbs hide in three places. The first is breading and binders: the breadcrumb in meatballs and meatloaf swaps cleanly for parmesan or crushed pork rind, which bind and season at nearly zero carbs. The second is beans, the filler in chili that was never in the original Bowl of Red anyway; leave them out. The third is flour and cornstarch thickeners in sauces and gravies; reduce the sauce instead, or stir in a little cream cheese, or let tomato paste do the work. Learn those three swaps and most of the comfort-food menu opens back up.
Pick by method
The fastest way to choose is by how much you want to be in the kitchen. For a set-it-and-forget-it night, the slow cooker turns pork into keto carnitas while you are out. For a big batch that feeds a crowd and gets better as leftovers, the stovetop simmers my mom's no-bean chili con carne for two hours. And when you want the oven to do it, a tray of keto stuffed meatballs or a bacon-wrapped keto turkey meatloaf bakes into a real comfort dinner with no breadcrumb in sight.
