Lunch is where a Low Carb day tends to fall apart, so I keep a stack of go-to ideas that travel well and fill you up. Salads that are not boring, roll-ups in place of sandwiches, leftovers that reheat better than they have any right to. I have found that a good Low Carb lunch is mostly about planning ahead, so a lot of these are make-ahead or pack-and-go. Feel free to build them out with whatever protein and vegetables you have on hand.
