Low Carb Lunch Ideas You Can Pack Ahead

By The Sugarfreechic Cook

The trick to a low carb lunch that survives the morning is choosing food that travels well. Salads and stuffed eggs do not mind a few hours in a lunch box, and most of them taste better made the night before. Keep the dressing in its own little container so the greens stay crisp, lean on protein and fat, and you have a lunch that holds you to dinner without the 3pm carb crash. No microwave required.

In today's post since my stomach is still what I am calling "under construction" I have decided to post some of my favorite lunch recipes that you may have missed the first time around. Just because I may be eating very bland food at the moment doesn't mean that I have to put my poor husband through that as well. These recipes are easy enough that you can make them up the day before and just pop them in your lunch box.

Five low carb lunch ideas that travel in a lunch box

Most of these are low carb salads, so feel free to pack the dressing on the side and toss it in right before you eat. The two chicken salads and the tuna stuffed eggs are happiest cold, the crustless quiche reheats in a snap, and the tomato bisque is the one you will want a thermos for.

Frequently asked questions

What are the best make-ahead low carb lunch ideas for work?

Salads and stuffed eggs travel best. Pack the protein, greens, and toppings the night before, keep the dressing in a small separate container, and add it right before you eat so nothing goes soggy. Tuna or chicken salad spooned into hard-boiled egg whites holds up in a lunch box all morning with no microwave needed.

How do I keep a low carb work lunch from leaving me hungry by 3pm?

Build the plate around protein and fat instead of bread. A chicken salad or a couple of stuffed eggs keeps you full straight through to dinner, which is what heads off the mid-afternoon carb crash that a sandwich tends to set off.

Can these low carb lunches be packed without a microwave?

Yes. The salads and stuffed eggs are meant to be eaten cold, so they go straight from the lunch box to your desk. Only the tomato bisque wants reheating, so save that one for days you have a microwave or a thermos.
