Keto Taco Salad (No Shell)

By The Sugarfreechic Cook 5.0 (1)

Method

This keto taco salad with no shell keeps everything that makes a taco salad great and drops the two things that wreck it for carbs: the fried shell and the sugary seasoning packet. Seasoned ground turkey over greens lands at about 5 grams of net carbs, and the seasoning trap below is where most of the hidden carbs sneak back in.

I know what your thinking. Yet another salad? The fact is I eat a salad for lunch almost every day. It is a great way to eat a well balanced Low Carb meal. But sooner or later you are going to get tired of eating the same old boring salad. Sometimes you just gotta spice things up! A taco salad is the perfect way to do this. You know a taco salad is pretty Low Carb friendly to begin with. You just have to ditch the tortilla strips and the rest of the salad is good to go. Instead of going out for a taco salad try making one at home.

Drop the shell, watch the seasoning

A taco salad is a Tex-Mex plate that goes low-carb the second the fried tortilla bowl comes off, since the filling, seasoned meat, cheese, lettuce, salsa, was never the problem. The quieter trap is the seasoning. Most store taco packets are padded with maltodextrin, sugar, and cornstarch, which run about 4 to 5 grams of net carbs a tablespoon, so mixing your own from chili powder, cumin, paprika, garlic, and oregano is the single biggest carb saving here. Keep an eye on the salsa and sour cream too, the other places sugar likes to hide.

Net carbs and cooking the turkey

With homemade seasoning this lands closer to 3 grams of net carbs, and around 5 with a packet. Cook the ground turkey all the way through to 165 degrees F, which the USDA sets for poultry, and dress the greens only just before eating so they do not wilt under the warm meat. For more ways to keep lunch from getting boring, my cobb salad rings a different change, a chile relleno brings the same Mexican flavors hot, and parmesan crisps stand in for tortilla chips. It is one of the beef-and-turkey plates in my low carb salads guide.

Frequently asked questions

How many carbs are in a low carb taco salad?

About 5 grams of net carbs a serving with a store seasoning packet, closer to 3 with a homemade blend. The fried shell is what makes a restaurant taco salad carby, so dropping it does most of the work.

Is taco seasoning keto?

Plain spices are, but most store packets are not. They sneak in maltodextrin, sugar, and cornstarch, around 4 to 5 grams of net carbs a tablespoon. A homemade blend of chili powder, cumin, paprika, garlic, and oregano cuts that to about 1.5.

What do you use instead of a taco shell?

Nothing, or a bed of chopped romaine. The salad is already taco filling, so a bowl of greens replaces the fried bowl with no carbs.

Can I use ground beef instead of turkey?

Yes. Turkey makes a lighter plate, but seasoned ground beef works the same way and keeps the carbs just as low.
