These spider deviled eggs are a keto Halloween appetizer, classic deviled eggs topped with little black-olive spiders, at about 1 gram of net carbs each. The trick that makes them work is a firmer yolk filling that holds the legs in place, and below is how to build them.

Happy Halloween! Last weekend I went to a Halloween party and I was asked to bring an appetizer or candy, so I decided to bring these scary little guys. I simply used my recipe for Deviled Eggs and cut medium-sized black olives into the shape of a spider. They were a hit and I was happy to have something to eat since the rest of the table was over flowing with candy and other sugar filled treats. It takes a one and half olives to make each spider. You simply cut the olive in half to make the body and then cut two halves into quarters to create the spider's limbs. Here's a tip, I also made my yolk filling a little dryer so it would work more like a paste. This made it easy to keep the legs in place. The trick: a firmer filling

Deviled eggs are the American cousin of the French oeufs mimosa, halved boiled eggs with a seasoned yolk filling, and most of the year you want that filling soft and creamy. For spiders, go the other way. A wetter filling lets the olive legs slide right off, so cut back the mayo until the filling sets up more like a paste; it grips the olive pieces and holds the spider together. Spoon or pipe it just below the rim so the body sits flat and the legs reach down the sides.

The real win is having something to actually eat at a party drowning in sugar. These are protein, fat, and almost no carbs, which is exactly what a Halloween spread is missing.
